Welcome to 2021! The New Year brings much hope to a dreary Wintry season.
We celebrated at home with two dishes one was:

Hot Italian Sausage Fra Diavolo with Spaghetti
I pound of Hot Italian Sausage
1 tablespoon of Sriracha Sauce
1 Jar Marinara Sauce
1 Box Whole Wheat Pasta or Spaghetti
3 Small White Onions, Diced
2 Medium Green Bell Peppers, Diced
1 Can of Diced Tomatoes
Steps:
Brown up Hot Italian Sausages, you can slice them into coins, or split them down the middle or keep them whole.
Carmelize Onions and fry up the Green Peppers, once onions are browned throw in the Jar of Marinara and the Sriracha sauce and Diced Tomatoes. Warm.
Stir in boiled and strained pasta or spaghetti, allow the pasta to soak up some sauce and add and warm up sausage and serve.
Another dish we had was:
Butter Dill Salmon, with sides of Pumpkin Spice Sweet Potatoes, and Steamed Snap Peas

Ingredients:
Butter Dill Salmon
10 Once Salmon Fitets (2)
Tablespoon of Dill
Tabs of Butter
Instructions:
Bake or Grill Salmon with wash of butter and dill on top, if you bake the salmon be sure to butter the bottom of the pan or baking dish.
Pumpkin Spice Sweet Potatoes
2 Large Sweet Potatoes, cut into coin like pieces
Tablespoon Pumpkin Spice Blend
One Stick of Butter
1/2 cup of Brown Sugar
Bake:
Bake all ingredients and stir halfway through, cook until soft at 350 degrees.
Steamed Snap Peas with Butter.
Fresh of Steam In Bag Snap Peas
Use Steam in Bag for Microwave or Fresh Snap Peas with a steamer. Toss in butter afterward in a serving bowl
